Chinese cuisine has a vast wealth of delicious vegan dishes. Chinese food is among the richest in the world in terms of usage and variety of veggies and mushrooms. And there are endless types and ways to cook tofu, which has been a Chinese staple for many centuries. Seasonings, including fragrant aromatics, tantalizing spices, and sauces with deep umami, make veggie dishes even tastier than most meat dishes. It’s hard to choose favorites among the hundreds of vegan recipes I’ve cooked, but you can’t go wrong with Dan Dan Noodle, Eggplant in Garlic Sauce, and Kung Pao Cauliflower.
