DESCRIPTION: Small, delicate perennial from deeply buried tuber from with two or more stems arise. Leaves two, opposite, strap-like and somewhat succulent. Flowers whitish to more commonly tinged heavily with pink due to prominent colored nectar guides on petals.

The Spring Beauty is an edible plant. Both man and beast may eat the leaves and the tubers (or corms). Both the Native Americans and the European settlers ate parts of this plant. Livestock and the White-tailed Deer (Odocoileus virginianus [Boddaert]) eat the leaves as well as the stems and the flowers.

To sight Claytonia virginica's distinctive pink stripes in open woodlands signifies that spring has arrived and the woodlands are filled with diverse wildflowers.

Entire plant goes dormant soon after it blooms. If planted in a lawn, let the leaves go dormant before mowing.

Interesting Tidbits– Spring Beauties grow from a corm that is edible. I have never eaten one and am not advocating it. But, I have read that they were considered delicacies by Native Americans. Apparently they taste like radishes when raw, but when baked have a flavor like potatoes or chestnuts.

Past medicinal uses have included using powdered corms to treat convulsions and as a contraception. Other species of spring beauty have been used by various Indian tribes to make poultices to treat eye problems and as an infusion to treat sore throats, dandruff, and urinary tract problems.

Claytonia perfoliata, commonly known as miner's lettuce, rooreh, Indian lettuce, or winter purslane, is a flowering plant in the family Montiaceae. It is an edible, fleshy, herbaceous, annual plant native to the western mountain and coastal regions of North America.

Native to East Texas and most of the eastern portion of the United States, Virginia Springbeauty is a short flower which is one of the first to bloom in spring. Virginia Springbeauty is usually seen in small clumps, and their blooms are a delight to discover.

A perennial herb, spring beauty usually grows about six inches tall and eight inches wide. It sports grasslike, succulent, dark green leaves. In early spring, dense racemes of star-shaped, pink-tinged white flowers appear and last for about a month.

For sowing in flats or pots indoors, seeds should first undergo six weeks of cold in the refrigerator, in a moist medium such as sphagnum moss. In the fall, when plants are dormant, the small, dark tubers can be set out, 2-3 inches deep and 4-6 inches apart, in their permanent locations.
