For a two year period, I cut onions out of my diet entirely due to a food sensitivity but ever since reintroducing them a few months ago, I am having so much fun trying new ways to enjoy them! I missed onions so much and these pickled refined sugar free onions are made weekly in my house. They take less than 10 minutes to make and can last up to two weeks in the refrigerator.

Most recipes you find on the internet to make these use cane sugar. I wanted to avoid refined sugars, so I used maple syrup instead and thought they came out JUST as good!

To make these, all you need to do is slice up a red online into small slivers, place those slivers into a mason jar, and mix the rest of the ingredients in a bowl then add to the mason jar and top with water and you can watch the onions turn the prettiest pink. It takes about 12-18 hours, at room temperature, for the onions to change color and ferment, so it does require a little bit of patience. You will know they are done once the water change to a pink color. You can then drain the water and store the onions in the jar in the refrigerator.

Not only are these onions a gorgeous color, but they taste delicious and spice up tacos, salads, or grain bowls! They also compliment so many other foods such as lettuce, eggs, and quinoa plus they have incredible health benefits.

For this recipe, you will need:

  • Red Onion
  • Salt
  • Apple Cider Vinegar
  • Maple Syrup: it’s best to use pure maple syrup for best flavor and to be the most nutrient dense and cleanest option

How to Store:

  • Store in a 12oz mason jar and move them to the fridge once they change to pink
  • Store up to 2 weeks in the fridge

  • Mason Jar

Ingredients

  • 1/2 large red onion, slivered
  • 1 1/2 tsp salt
  • 1/2 cup apple cider vinegar
  • 1 tbsp maple syrup
  • 1 cup water

Instructions

  • Cut half of a large red onion into small slivers and place into a mason jar.

  • In a small bowl, combine the salt, apple cider vinegar, and maple syrup and mix well until salt is dissolved.

  • Add this mixture to a 12oz mason jar and then top the onions with 1 cup of water.

  • Place a lid tightly on the mason jar and let it sit out for 12-14 hours.

  • Wait for the color of the onions to change to a light pink and then store in the fridge. ENJOY!
