This keto chicken noodle soup is a wonderful comfort food, is very easy to make and is packed with protein, vegetables and healthy chicken bone broth. You can load it with your favorite low carb vegetables or just add the basics – celery, onion and carrot. This keto soup is healthy, low in carbs and delicious, which is why it makes for the perfect keto friendly dinner for the whole family during cold weather!

Chicken noodle soup is popular in a lot of countries around the world.

It is such a classic heart warming recipe but the traditional recipe is typically packed with carbs particularly because of the noodles and the choice of vegetables used which are usually higher in carb, thus making it not keto friendly. Chicken noodle soup is also used as a remedy for colds in many countries. This recipe has all the components of a traditional chicken noodle soup, but it is a lot lower in carbs and keto approved! There are only 3.2 grams net carbs per serving of the tasty keto chicken soup.

For this chicken soup recipe we use keto egg noodles which are very easy to make and can be added when the soup is ready. You can even make extra to use for other recipes! We also use chicken bone broth as it takes the soup to the next level when it comes to taste and also health benefits. Bone broth is rich in collagen and minerals which help build and strengthen your bones. Bone broth also makes for a great gut healing base.

Keto chicken noodle soup is great to eat on its own as a meal as it is filling enough. However, if you wish to serve something with it for a nicer presentation, you can use keto bread rolls, low carb crackers or even a simple chopped garden salad for a refreshing side!

How to make keto chicken soup?

  • Step One: Preheat the oven to 200 degrees

    Preheat oven

    Preheat oven to 200 degrees.

    Add butter to a large stock pot and melt over medium heat. Add onion, celery, carrots and salt. Cook until just tender.

    Stir in chicken broth and add bay leaf. Add chicken. Bring to boil, then reduce to a simmer. Let simmer uncovered while making noodles.

    Make the egg noodles

    To make the keto egg noodles, combine almond flour, xanthan gum, salt and onion powder to a small bowl. Whisk in hot water and egg. Mix to combine. Place dough in between two sheets of parchment paper.

    Bake the noodles

    Using a rolling pin, roll out dough until it is about ⅛ to ¼ inch thick. Using a pizza cutter or knife, cut the dough into thin or thick strips - which ever you prefer. Transfer the noodles to a parchment lined baking tray and bake at 200 degrees for 15 to 20 minutes.

    Add the noodles

    Remove noodles from the oven. Remove the soup from the stove top and add the noodles to the soup. Serve.

    How to make keto egg noodles?

    The keto egg noodles require minimal ingredients, most of which you will probably already have in your pantry.

    They are very quick to make and thus, can be made while your soup is simmering on the stove.

    All you need to do to make these low carb egg noodles is:

    • Combine almond flour, xanthan gum, salt and onion powder
    • Then whisk in hot water and an egg to make the dough
    • Cut out the dough into thin or thick strips as you prefer them.
    • Place them on a parchment lined baking tray and bake in the oven!

    Pretty easy right?

    If you prefer not to make your own keto egg noodles, you can use other substitutes for noodles in this soup.

    Other low carb noodle options which can be used in this recipe include spaghetti squash, cabbage, zucchini noodles (aka zoodles), kelp noodles, hearts of palm noodles and shirataki noodles. Shirataki noodles are a common keto noodle but they can be rubbery and carry a strange smell. Spaghetti squash is a delicious option but it will increase the carbs in this recipe.

    Most of the noodle types mentioned would need to be added into the keto chicken soup in the last five minutes as they cook very quickly and you don’t want them to become too soft in your noodle soup.

    Can I make this chicken soup without noodles?

    Yes, you can make this keto chicken soup without noodles. You don’t need to add noodles if you prefer not to make a noodle soup. If you don’t want to use any of the options mentioned above, like shirataki noodles, hearts of palm, spaghetti squash, zucchini noodles (spiralized zucchini) – just omit the noodles completely. It will still taste delicious! You could even add more vegetables – like celery, onions, carrots – even daikon radish to make the soup more hearty!

    Is Campbell's Chicken Noodle Soup keto friendly?

    Campbells Chicken Noodle Soup is not keto friendly as it has 8g of carbs per serving.

    The serving size is 1/2 cup. That’s a lot of carbs for just a half a cup.

    Moreover, the noodles in Campbells Chicken Noodle Soup contain gluten and might cause inflammation which can in turn hinder any benefits coming from a keto diet, like weight loss and health benefits. Thus, we do not recommend Campbell’s Chicken Noodle Soup to anyone on a low carb diet. On top of that, Campbell’s uses generic chicken broth, instead of bone broth.

    Instead, make this keto chicken noodle soup as it only has 3.2 g net carbs per serving.

    Can I use raw or cooked chicken?

    For this recipe for chicken soup, you can use either raw or cooked chicken.

    If you decide to use raw chicken, there are some extra steps which you need to follow before starting with the actual recipe. You will need to start with adding the chicken to water. If you are using raw chicken, there is no need to use chicken broth as you will be making your own chicken stock from scratch.

    1. Cook the chicken in 4 cups of water on the stove top. We prefer using chicken thighs, chicken breast, legs or whole chicken. Add a few teaspoons of salt.
    2. Bring to a boil, then turn down to a simmer.
    3. Cook uncovered until the chicken is tender and appears to be falling off the bone. This will take around 1 to 1.5 hours.
    4. Separate the chicken from the bones to use in the soup. Strain the chicken broth and reserve the stock for the chicken noodle soup.
    5. Now you can start following the recipe as written.

    One shortcut in this low carb chicken soup recipe is to use pre-cooked shredded chicken. You can even use a rotisserie chicken for your soup.

    Storage

    If you have leftovers of this chicken soup, you can easily reheat your keto soup for lunch the next day.

    However, we would recommend leaving out the noodles before reheating and then adding them after. If you wish to make a larger batch, this keto chicken noodle soup can be refrigerated for 5 to 7 days or you can even freeze it to use for whenever you need it!

    That way you can enjoy your low carb chicken soup anytime!

    Keto chicken soup: slow cooker option

    If you wish to make this recipe in a slow cooker, I suggest you make the soup portion of the recipe. Then make and add the keto noodles to the crock pot at the end, right before serving the chicken soup.

    Yes, this chicken soup with egg noodles is gluten free. It is true, that most egg noodle recipes use wheat flour, however we use almond flour and xanthan gum in our egg noodles and because of this our recipe has 0 gluten.

    Can I add cauliflower rice?

    3. Can the egg noodles in the recipe be made using coconut flour instead? I’m usually not a fan of the texture almond flour gives most foods. I can’t wait to try this recipe, regardless of the answer. It’s on my meal prep list for next weekend.

      1. I haven’t tried it with coconut flour. For every 1 cup of almond flour I use, I would use 1/4 cup coconut flour, so try that conversion if you try it as a sub for the noodles.

      1. I haven’t tried freezing them, but I think it would work. You can try freezing them as a sheet or flash freeze the cut noodles individually before placing in a freeze bag or container to freeze together long (just to keep them from sticking together). Also, I wouldn’t bake them yet. Thaw at room temperature, then bake.
