In an age of convenience foods, I went off to college and was stunned to discover there was such a thing as instant mashed potatoes. As much as mom cooked from scratch though the one thing I did have growing up was Bisquick. From that bright yellow box came a wonder of goodness; pancakes, biscuits, cheese filled dumplings. I can’t recall for certain but we may have even had an Impossibly Easy Cheeseburger Pie. Easy and makes its own crust? Impossible!

Now that I’m called upon to make pancakes at 6:30am on a weekday morning, you bet I use a mix but I make my own homemade baking mix. First of all the ingredients in Bisquick aren’t great.

bleached flour, partially hydrogenated oil, leavening including aluminum,
dextrose (sugar’s too expensive?) and salt

Second,BUTTER.So much buttery goodness! Everything made with this mix tastes fantastic. Like the quickest sticky buns in the whole world:

And it’s still impossibly easy. You’ll whip up pancakes faster than you ever thought possible:

While Bisquick can be stored in the pantry [thanks partially hydrogenated oil!] this homemade baking mix needs to be stored in the refrigerator or freezer. But don’t worry, at a moment’s notice you can still whip up some parmesan herb biscuits:

You can also substitute half whole wheatflour if you like. I leave out sugar because I like my savory foods to be savory, but the box is sweeter so youcan add 2 tablespoons of sugar to the mix if you like. Especially if you are more a Krusteaz fan than a Bisquick fan, Krusteaz is definitely sweeter. It also has artificial flavors, modified food starch and other weirdness so definitely try making your own. You may be surprised at how much better everything tastes. Even the kids will appreciate it. Like they appreciate everything you do. Bwahahahaha! I crack myself up. But make them some pigs-in-a-blanket anyway.

If I can’t find it online, I may post the recipe for the dinner we had with the cheese filled dumplings. So bad but sooooo good.

DIY Baking Mix

Ingredients

  • 4 ½ cups unbleached all purpose flour
  • 2 ½ tablespoons baking powder
  • 1 ½ teaspoons table salt
  • 8 tablespoons one stick butter

Instructions

  • Blend all in a food processor until butter is fully incorporated. Alternatively you can stir together dry ingredients and cut butter in with a pastry blender.

  • Store in fridge if using within a couple weeks, otherwise store in the freezer.

Notes

Doubles easily.
