Baked Garlic Chicken Recipe

This garlic chicken recipe has been on my mind for quite awhile. Some recipes come to me and I know exactly how they are supposed to be from the first minute, other times I have it in my mind but really have to marinate on the idea for awhile (see what I did there, ha!) until I figure out the way to make the flavors combine and shine in the best way.

I am so glad I took the time (and by took the time, I mean close to a year) to think about it until I had no doubt it would be to-die-for delicious because this chicken hit the mark.

The thing is, chicken can be really boring and bland. And some recipes where chicken really shines are so complicated and messy to make that it really just isn’t worth it. I have 3 kids, a full time job, and a husband whose career requires my support. I like to cook, but I just don’t have time for lengthy, messy, high maintenance recipes. I don’t.

This Baked Garlic Chicken recipe checks all of the boxes, and does it with the flavor and deliciousness of a meal that took much longer. I hope you will agree!

What to serve with Baked Garlic Chicken

I have a few that we especially love, and will list both traditional and low carb serving ideas. We generally pair the dish with 2-3 options using some from each list.

Baked Garlic Chicken Ingredients

  • 2 lbs boneless, skinless chicken breast- this will be about 3-4 normal sized chicken breasts. If they are extra thick, I would recommend butterflying them (cutting the thickness in half) so that they cook more quickly and evenly.
  • 8 oz cream cheese, softened-I use regular original Philadelphia cream cheese. You can also use low fat orneufchatel cheese.
  • 1/2 cup sour cream or greek yogurt-Either will work in the recipe, however I use cream cheese since it is what I have on hand most regularly.
  • 6 cloves garlic, crushed through a garlic press-This may sound like a lot of garlic, but once it is cooked it will just be pure delicious flavor! I do absolutely recommend using fresh garlic, not jarred. Since garlic is the key ingredient in this dish it really will give you a much better flavor with fresh! If you hate peeling garlic they do sell it pre-peeled in many stores.
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 cup mozzarella cheese-You could really use any flavor cheese here since garlic is good with all of them, but I do think mozzarella goes exceptionally well with the dish.

You can serve the chicken just as is out of the oven, but if you want to add a little color for presentation both of these are great options for garnish.

  • Fresh Parsley
  • Grape tomatoes, quartered

Baked Garlic Chicken Instructions

  1. Preheat oven to 375˚F.
  2. In a medium bowl, mix cream cheese, sour cream, garlic, salt and pepper until combined. Make sure that your cream cheese is softened. It does not combine well until it is soft. If you forget to take it out of the fridge ahead of time you can just put it in a microwavable safe bowl and pop it into the microwave for 30 sec increments, stirring in between until it is smooth and creamy.
  3. Lay chicken breast flat in a casserole dish. Spread the cream cheese mixture on top of the chicken and top with the mozzarella cheese. You can also choose to cut the chicken into smaller pieces or use chicken tenderloins to make it easier to serve. If you do use smaller pieces of chicken it will take less time to cook, so keep an eye on it.
  4. Bake for 30-40 minutes or until chicken is cooked through (165˚F internal temp.) I bake my chicken uncovered and have never had a problem with it getting too browned. With that said, each oven cooks differently based on size, power, climate etc. I would keep an eye on it and if you notice it getting more browned than you want, you can loosely cover it with foil for the remainder of the cooking time.

Remove from oven and garnish with parsley and tomatoes as desired. Serve it up hot with any, or as many, of the side options as you want.
